摘要
畜牧业及水产养殖业中抗生素的广泛滥用,导致抗生素在动物源性食品中残留超标,危害食品安全及人民身体健康。基于检测成本高、速度慢、效率低等问题的考虑,传统的理化方法已经难以满足日益严峻的食品质量检测的需要,人们需要灵敏度更高、特异性更强、更简便快捷的检测方法,现代生物技术在食品检测中的应用使这种要求成为可能。本文对现代生物技术在动物源性食品抗生素残留检测中的应用现状进行了综述,阐述了各种现代生物技术的原理、特点、应用现状并进行了展望,以期为相关机构及研究者提供参考。
The widespread abuse of antibiotics in animal husbandry and aquaculture has led to excessive antibiotic residues in animal-derived foods,endangering food safety and people’s health.Based on the consideration of high detection cost,slow speed,low efficiency and other issues,traditional physical and chemical methods have been unable to meet the increasingly severe needs of food quality detection.People need more sensitive,specific,simpler and faster detection methods.Modern application of biotechnology in food testing makes this requirement possible.This article reviews the application status of modern biotechnology in the detection of antibiotic residues in animal-derived foods,expounds the principles,characteristics,application status and prospects of various modern biotechnologies,hoping to provide references for related institutions and researchers.
