摘要
试验探讨不同养殖模式对坝上长尾鸡肌肉组织结构及肉品质的影响。选取120日龄健康的坝上长尾鸡,笼养、网上散养、草地放养、山地放养各30只,分别取胸肌,腿肌制作切片,观察胸肌、腿肌的肌纤维直径、密度和肌间脂肪;测定肌肉中脂肪酸和氨基酸的含量;检测肌肉pH值、剪切力和滴水损失。结果表明:山地放养模式可增大胸、腿肌纤维直径,降低肌纤维密度,增加肌间脂肪;增加鲜味氨基酸比例;增加肌肉剪切力。研究表明,山地养殖坝上长尾鸡的肉品质优于草地养殖、网上散养和笼养,且肌间脂肪含量高,系水力好。
To explore the effect of different breeding modes on the muscle tissue structure and muscle quality of Bashang long-tailed chicken, 120-day-old healthy Bashang long-tailed chickens were divided into cage-rearing, net-rearing, grassland-breeding and mountain-breeding with 30 chickens in each group. The breast muscle and leg muscles were taken to make sections to observe the muscle fiber diameter, density, and intermuscular fat of breast muscle and leg muscles;the content of fatty acids and amino acids in muscle were determined;muscle pH value, shearing force and drip loss were measured. The results showed that the mountain stocking mode increased the diameter of chest and leg muscle fibers, reduced the density of muscle fibers, and increased intermuscular fat;increased delicious amino;increased the muscle shearing force. Therefore, for the breeding mode of Bashang long-tailed chickens in Bashang area, mountain breeding is better than grass-breeding, online free-range breeding and cage breeding.
