摘要
该试验比较了广东丝瓜不同部位(果实、茎、叶、种子和丝瓜络)乙醇提取物抗氧化活性和抑制亚硝化活性,探究其总酚、总黄酮含量与活性的相关性。采用Folin-酚法测总酚含量,硝酸铝法测总黄酮含量;采用DPPH法、ABTS法及普鲁士蓝法评价抗氧化活性;采用盐酸萘乙二胺法评价亚硝化抑制活性;采用Pearson法进行相关性分析。结果表明,广东丝瓜果实总酚含量最高(21.43±2.16 mg GA/g),茎总黄酮含量最高(15.10±1.52 mg RT/g),茎乙醇提取物清除DPPH自由基和ABTS自由基能力最强,果实乙醇提取物对铁还原能力和清除亚硝酸盐能力最强。相关性分析表明,广东丝瓜乙醇提取物抗氧化和抑制亚硝化活性与其总酚、总黄酮含量均呈极显著正相关(p<0.01)。广东丝瓜的茎和果实具有潜在开发为抗氧化和抑制亚硝化作用的功能性原料。
The antioxidant activity and nitrosation inhibition activity of ethanol extracts from different parts of Luffa acutangula(L.)Roxb(fruit,stem,leaf,seed and loofah)were studied to explore the correlation between the content and activity of total phenols and flavonoids.Folin-phenol method was used to measure the content of total phenols,while aluminum nitrate method was used to measure the content of total flavonoids.DPPH,ABTS and Prussian blue were used to evaluate the antioxidant activity,and naphthylethylenediamine hydrochloride was used to evaluate the nitrification inhibition activity.Pearson method was used for correlation analysis.The results showed that fruit of Luffa acutangula(L.)Roxb.contained the highest levels of total phenolic content(21.43±2.16 mg GA/g),and leaf contained the highest levels of total flavonoid content(15.10±1.52 mg RT/g).The stem ethanol extract had the strongest ability to scavenge DPPH and ABTS,while the fruit ethanol extract had the strongest ability to reduce iron and scavenge nitrite.The results of correlation analysis showed that there was a significant positive correlation between the anti-oxidation and anti nitrification activities of the inhibitory activity of Luffa acutangula(L.)Roxb.and the contents of total phenols and flavonoids(p<0.01).The stems and fruits of Guangdong towel gourd had potential to be used as functional raw materials to resist oxidation and inhibit nitrosation.
