摘要
在采用MiSeq高通量测序技术对糯米酸中细菌多样性进行解析的基础上,对细菌表型和基因功能进行了预测。结果发现,糯米酸的细菌类群主要为隶属于Firmicutes(硬壁菌门,97.45%)的Lactobacillus(乳酸杆菌属,89.36%)和Pediococcus(片球菌属,6.37%)。有5个分类操作单元存在于所有样品中,均被鉴定为Lactobacillus,累计平均相对质量分数为10.27%。表型预测表明,糯米酸中细菌类群主要为革兰氏阳性的厌氧菌和兼性厌氧菌,具有移动原件、生物膜形成能力和致病潜力的菌群相对质量分数均较低。基因功能预测表明,细菌类群在氨基酸转运与代谢、碳水化合物运输与代谢等功能上具有较高的表达。由此可见,糯米酸中蕴含了较为丰富的乳酸菌资源。
In this paper,bacterial diversity of fermented glutinous rice samples was analyzed by MiSeq high-throughput sequencing technology,and the bacterial phenotype and gene function were also predicted.The results indicated that the domain bacterial groups of fermented glutinous rice were Lactobacillus(89.36%)and Pediococcus(6.37%),which belonged to Firmicutes(97.45%).Five core OTUs that existed in all samples were identificated as Latobacillus,with a cumulative average relative abundance of 10.27%.The results of phenotypic prediction indicated that the domain bacteria in fermented glutinous rice were anaerobic and facultative anaerobic strains belonged to gram positive bacteria.Meanwhile,the relative abundances of bacteria with mobile elements,biofilm forming and pathogenicity potential was lower.The result of gene function prediction indicated that the bacteria in fermented glutinous rice had strong functions of amino acid and carbohydrate transport and metabolism.Thus,the fermented glutinous rice contains abundant lactic acid bacteria resources.
