摘要
近些年挂面行业快速发展,实现了从机械化制作到自动化生产的跨越。从挂面生产中的配粉配水、和面熟化、复合压延、干燥脱水、切断包装等关键加工技术环节进行分析探索,对挂面加工工艺深入研究,了解加工过程中面条各组分的变化机理,结合市场需求,论述挂面行业的发展现状及未来趋势。
Noodle is one of the popular food,it has a long history and culture in our country.In recent years,noodle industry development fast,it has realized the leap from mechanized production to automatic production.This paper analyses and explores the key processing technology links in the production of dried noodles,such as powder mixing,dough mixing,sheeting,drying and cutting.Study on the processing technology of noodles deeply,to understand the change mechanism of noodle components during processing.According to the market demand,this paper discusses the current situation and future trend of the noodle industry.
