摘要
在橄榄油的生产过程中会产生大量的果渣废弃物,这些废弃物往往都大量堆积或焚烧,不能得到合理的利用,同时也造成了环境污染。多酚类物质作为油橄榄果渣中主要的天然活性成分,具有抗氧化、抗高血压、抗动脉粥样硬化、抗炎和降血糖等多种生物活性。为更好地开发利用油橄榄果渣多酚,对油橄榄果渣中多酚类成分的提取工艺及其生物活性进行综述,并对其发展前景进行展望。
A large amount of waste fruit residues has been outputting in the production process of olive oil,which was often piled up or burned in large quantities and cannot be used rationally so as to cause serious environmental pollution.As the main natural active ingredients in pomaces of Olea europaea,polyphenols have many biological activities,such as anti-oxidation,anti-hypertension,anti-atherosclerosis,anti-inflammation and hypoglycemic.In order to better exploit and utilize the polyphenols from olive fruit residues,the extraction technology and biological activity of polyphenols were summarized,and the prospect of its development was forecasted.
