摘要
四川小吃钵钵鸡调料产品质量执行GB 31644-2018《食品安全国家标准复合调味料》标准,该标准中未将酸价、过氧化值列入其中且未作限量要求。文章采用精密度高、适用范围广、颜色干扰小的电位滴定法测定复杂油状基体调料——钵钵鸡调料中酸价和过氧化值含量。开展了有证标准物质CFAPA-QC201919D-3和CFAPA-QC610B-2分析验证试验、方法精密度和加标回收试验,并将测定结果与手工滴定进行了比较。结果显示:酸价和过氧化值电位滴定测定值与标准值基本一致,相对误差分别为-1.92%和-2.04%,酸价和过氧化值的加标回收率分别为91.3%~105.8%和91.8%~104.1%,样品分析中酸价和过氧化值的RSD分别为1.52%~5.67%和1.79%~6.98%;电位滴定法与传统的手工滴定法检测结果无显著性差异,建立的方法有较高的准确度、精密度和重复性,为快速测定该类调料酸价和过氧化值含量提供了一条途径;以建立的方法对四川某地大型超市、农贸市场、销售点、小吃店等30个批次钵钵鸡调料中酸价和过氧化值含量进行检测,结果表明样品中酸价和过氧化值存在偏高甚至超标的风险。
The quality of Sichuan snack Bobo chicken seasoning products is subject to the standard of GB 31644-2018 National Standard for Food Safety-Compound Seasoning,in which,the acid value and peroxide value are not included and there's no limit requirement.The content of acid value and peroxide value in the compound oily matrix condiment of Bobo chicken is determined by potentiometric titration method with high precision,wide application range and little color interference.The CFAPA-QC201919D-3 and CFAPA-QC610B-2 certified reference materials are tested for analytical verification test,precision and spiked recovery test,and the results are compared with manual titration method.The results show that the potentiometric titration measured values of acid value and peroxide value are basically consistent with the standard values.The relative error is-1.92%and-2.04%respectively.The recovery rate of acid value and peroxide value is 91.3%~105.8%and 91.8%~104.1%respectively.The RSD of acid value and peroxide value in the sample analysis is 1.52%~5.67%and 1.79%~6.98%respectively.There's no significant difference between potentiometric titration method and traditional manual titration method.The established method has high accuracy,precision and repeatability,which has provided a way for the rapid determination of acid value and peroxide value of this kind of spices.By means of the established method,the content of acid value and peroxide value of 30 batches of Bobo chicken seasoning in large supermarket,farmers'market,point of sale and snack shop in Sichuan is tested.The results show that the acid value and peroxide value of the samples are high or even exceed the standard.
