摘要
为了解真空包装对马肉香肠理化特性及卫生状况的影响,笔者对乌鲁木齐市售真空包装的腌制马肉香肠食品安全卫生相关指标(酸价,亚硝酸盐,过氧化值,菌落总数,大肠菌群数)进行了测定。结果显示,真空包装马肉香肠的酸价为0.1309mg/g,亚硝酸盐含量为8.75 mg/kg,过氧化值为2.87× 10^(-4)g/100g,菌落总数为2× 10^(3)cfu/g,大肠菌群数28 MPN/100g,均未超过国家标准,但大肠菌群数接近限量值30 MPN/100g.对30份真空包装腌制马肉香肠样品应用食品安全国家标准——食品微生物学检验分别进行了致泻大肠埃希菌、沙门菌、金黄色葡萄球菌、单核细胞增生李斯特杆菌的检测。从平板计数琼脂与麦康凯琼脂培养基上长出的菌落中分离、纯化、测序后获得1株霍氏肠杆菌和1株大肠埃希菌。结果30份样品均未检出这4种致病菌。本次试验结果说明,市售真空包装腌制马肉香肠理化指标和微生物指标均未超过国家对于香肠的卫生要求,但也存在着一定的食品安全风险。
In order to know the impact of vacuum packaging on hygienic conditions of the hoi-se meat sausages,the food safety and hygiene related indicators were measured.The results showed that the acid value was 0.1309 mg/g,the nitrite content was 8.75 mg/kg,and the peroxide value was 2.87×10^(-4) g/lOOg,the total number of colonies was 2 × 10^(3) cfu/g,and the number of coliforms was 28 MPN/100 g.Then,30 samples were detected for the pathogenic Escherichia C oli,Salmonella,Staphylococcus aureus and Listeria monocytogenes.As a result,4 pathogens were notfound,and one strain of Enterobacter hormaechei and one strain of Escherichia coli were identified.It indicates that the physical,chemical and the microbiological indicatorsdid not exceed the national hygienic requirements,howeveilhere is still a certain food safety risk in the vacuum-packed horse meat sausages.
