摘要
为利用客家地区丰富的药膳资源开发天然抗氧化剂,以总黄酮质量和DPPH清除率为指标,从溪黄草、蛇舌草、一点红、白头翁、针包草和鸡骨草中筛选出抗氧化活性较高的溪黄草。在花生油抗氧化加速试验中,添加0.05%溪黄草提取物能在6天内抑制花生油的氧化;通过D101大孔树脂的吸附、洗脱,75%乙醇洗脱液的抗氧化活性比其他浓度乙醇洗脱液的高,其对花生油的抗氧化效果明显提高,且抗氧化效果随添加量的增加而增强;添加0.05%溪黄草75%乙醇洗脱物的抗氧化效果与添加0.02%TBHQ的效果接近。
In order to exploit natural antioxidants from Hakka medicinal and edible plants, Rabdosia serra was screened out from several plants, such as Rabdosia serra、Hedyotis diffusa、Emilia sonchifolia、Pulsatilla chinensis、Bidens pilosa and Abrus cantoniensis because the total flavonoids content and DPPH scavenging activity of Rabdosia serra were higher than the others. In the antioxidant test of peanut oil, 0.05 % Rabdosia serra extract could inhibit the oxidation of peanut oil in 6 days. Through the adsorption and elution of D101 macroporous resin, the antioxidant activity of 75 % ethanol elution was higher than that of other concentrations and the antioxidant effect on peanut oil was significantly improved. The antioxidant effect increased with the increase of the elution adding and the antioxidant effect of 0.05 % ethanol elution of Rabdosia serra was closed to the effect of 0.02 % TBHQ.
