碱蓬红色素的理化性质及抗氧化作用研究 被引量:2

摘要 对经AB-8大孔树脂纯化的碱蓬红色素的光谱特性进行研究,探讨了温度、光照、酸碱性、金属离子、氧化剂、还原剂、食品添加剂等因素对碱蓬红色素理化性质的影响,并对碱蓬红色素的抗氧化作用进行了研究。结果表明,碱蓬红色素在波长540 nm处具有最大吸收峰,属于酚类化合物。碱蓬红色素易溶于水,为水溶性色素。碱蓬红色素易被高温破坏,氧化剂、还原剂对碱蓬红色素的稳定性有一定影响,但在一定浓度范围内,浓度大小对其影响不明显,食品添加剂柠檬酸、蔗糖、山梨酸对碱蓬红色素无明显影响。金属离子Na^(+)、K^(+)、Ca^(2+)、Mg^(2+)对碱蓬红色素的影响较小,而Zn^(2+)、Cu^(2+)、Fe^(2+)、Fe^(3+)对碱蓬红色素的影响较大,碱蓬红色素对羟自由基、氧自由基和DPPH具有一定清除作用,随着碱蓬红色素浓度的增大清除作用增强。 To study on pectral characteristics of Suaeda haematochrome purified by AB-8 macroporous resin The effects of temperature,light,pH,metal ions,oxidant,reducing agent and food additive on the physicochemical properties of suaeda haematochrome were discussed,and the antioxidant activity of Suaeda haematochrome was studied.The results showed that Suaeda haematochrome has a maximum absorption peak at 540 nm,It belongs to phenolic compounds.Suaeda haematochrome is soluble in water and easy to be affected at high temperature.The stability of suaeda haematochrome is influenced on oxidant and reducing agent,but in a certain concentration range,The influence of concentration is not obvious.Citric acid as a food additives,sucrose,sorbic acid have no obvious effect on suaeda haematochrome.Metal ions such as Na^(+),K^(+),Ca^(2+),Mg^(2+) have little effect on it while Zn^(2+),Cu^(2+),Fe^(2+),Fe^(3+) have greater effect on it.Suaeda haematochrome has certain scavenging effect on hydroxyl radical,oxygen free radical and DPPH·,and the scavenging effect is enhanced with the increase of concentration.
