山欧杂交新品种“野王20号”葡萄酒理化指标评定

摘要 为评价山欧杂交品种“野王20号”葡萄酒的品质,对其进行一系列理化指标测定,并与市售欧亚种红葡萄酒对比.结果表明,葡萄果实在发酵前未做任何糖酸处理的情况下,酿出的葡萄酒酒精度为10.47%,总糖和还原糖含量分别为1.88,1.11 g/L,总酸含量为5.18 g/L,说明葡萄酒发酵完全,并克服了一般山葡萄低糖和高酸的缺陷,“野王20号”适合酿造干型葡萄酒.与市售欧亚种葡萄酒相比,“野王20号”葡萄酒虽然总酚较低,但其花色苷和黄烷3-醇含量较高,尤其DPPH自由基清除能力显著,铁离子还原能力无明显差异,为“野王20号”的推广利用提供基础数据,并展望可结合栽培管理方式、葡萄酒酿造工艺改善香气与糖酸比,进一步提升葡萄酒的品质. The objective of this study was to evaluate the quality of the wine made from“Yewang-20”,which is a new hybrid of Vitis amurensis and Vitis vinifera.A series of physical and chemical indexes were determined and compared these indexes with a market red wines made from Vitis vinifera.Although the grape berries did not do any sugar and acid treatment before fermentation,the wine had an alcohol content of 10.47%,a total sugar content of 1.88 g/L,a reducing sugar content of 1.11 g/L and a total acid content of 5.18 g/L,respectively.The result indicated that the wine had fermented completely and overcomed the defect of low sugars and high acids from the general Vitis amurensis grapes.So“Yewang-20”is suitable for dry wines.Compared with the wine made from Vitis vinifera on the market,although the total phenolic content of“Yewang-20”wine was low,the total contents of anthocyanins and flavan-3-olswere high.In particular,DPPH free radical scavenging ability of“Yewang-20”wine was significantly high,and the reducing power of iron ions was similar,provides basic data for the popularization and utilization of“Yewang-20”.The aroma and the sugar-acidratio could be improved by combining the cultivation and management methods and winemaking techniques,which would further enhance the quality of the“Yewang-20”wine.
