摘要
鲜切水果具有新鲜、营养、便捷等优点,深受人们的喜爱,然而由于其易被微生物污染,销售量受到了很大限制。涂膜保鲜技术简单易行,成本低,是果蔬保鲜常用的一种有效手段,本文介绍了果蔬涂膜保鲜的技术特点,涂膜保鲜剂的种类及其应用,为果蔬保鲜提供新思路。
Fresh-cut fruits have the advantages of freshness,nutrition,convenience,etc.,and are deeply loved by people.However,their sales are greatly restricted due to their easy to be contaminated by microorganisms.Coating preservation technology is simple and easy to implement,low cost,and it is an effective method commonly used for fruit and vegetable preservation.This article introduces the technical characteristics of fruit and vegetable preservation,the types and applications of coating preservation agents,and provides new ideas for fruit and vegetable preservation.
