摘要
褐藻是人类生产生活中被广泛应用的一种可食性海洋藻类植物,它含有大量的生物活性物质,如褐藻多糖、褐藻多酚、蛋白质、维生素、膳食纤维、无机盐等。这些生物活性物质在功能性食品中均具有营养物质丰富、应用前景广阔、经济价值高的特点。总结相关文献资料,综述了褐藻中一些比较常用的生物活性物质的营养特点,并总结了其在功能性食品中的应用现状,为后续的产品应用研究提供了参考。
Brown algae is a kind of edible marine algae widely used in human production and life,it contains a lot of bioactive substances,such as brown algae polysaccharides,brown algae polyphenols,proteins,vitamins,dietary fiber,inorganic salt and so on.These bioactive substances have rich nutrients,broad application prospect and high economic value in functional food.In this paper,through consulting the literature materials,the nutritional characteristics of some commonly used bioactive substances in brown algae are reviewed,and their application status in functional food is summarized,which has provided a reference for the subsequent product application and research.
