摘要
《酿酒大曲通用分析方法》中以酒化力评判大曲的产酒能力。在原检测方法的基础上,采用多粮为反应底物,对底物进行糖化预处理,增加发酵醪蒸馏用量等方法进行优化。结果表明,优化后的大曲产酒能力检测方法更加高效、准确,更接近于酿酒实际生产。
In the industrial standard for general analysis methods of Daqu, the detection method of liquor-producing capacity of Daqu is specified. In this study we optimized the detection method by using multiple grains as the reaction substrate, pretreating the substrate by saccharification, and increasing the amount of fermentation mash during distillation. The results showed that the optimized method was more efficient and accurate, and was closer to actual production conditions.
