摘要
从山楂、食醋、陈皮、生姜、绿茶、茉莉花茶中筛选出脱腥效果较好的2种脱腥剂,继续进行对海带的复合脱腥,并以脱腥制得的海带粉、琼脂粉、胖大海粉、冷榨亚麻籽油为主要原料,研制一种具有降脂通便作用且口感均衡的保健代餐粉。以感官评价为指标,通过单因素试验和正交试验优化工艺参数,确定海带最佳脱腥工艺和代餐粉最佳配方。结果表明, 6种单一脱腥液均有一定的脱腥效果,以生姜-陈皮复合脱腥效果最佳,且复合脱腥的最佳工艺条件为生姜液质量分数2%、陈皮液质量分数3%、脱腥温度80℃、脱腥时间40 min;代餐粉最佳配方为膨化粉(W脱腥海带粉∶W琼脂粉∶W胖大海粉=12∶9∶1) 22.0 g、冷榨亚麻籽油3.0 g、山楂粉0.5 g、红枣粉3.0 g、木糖醇11.0g。经此脱腥工艺和配方制得的代餐粉气味适宜,口感较好。
From hawthorn, vinegar, tangerine peel, ginger, green tea and jasmine tea, two deodorizing agents with better deodorization effect were selected to continue the compound deodorization of kelp. Taking kelp powder, agar powder, fat sea powder and cold pressed flaxseed oil as main raw materials, a health food substitute powder with lipid-lowering and defecation effect and balanced taste was developed. Taking sensory evaluation as the index, the best deodorization technology and the best formula of substitute meal powder were determined by single factor test and orthogonal test. The results showed that six kinds of single deodorization solutions had certain deodorization effect, the compound deodorization effect of ginger and tangerine peel was the best, and the best deodorization process conditions were as follows: the concentration of ginger solution was 2%, the concentration of orange peel was 3%, the deodorization temperature was 80 ℃, and the deodorization time was 40 min;The best formula of meal replacer was puffed powder(Wkelp powder∶Wagar powder∶Wpanghaifen=12∶9∶1) 22.0 g, cold pressed flaxseed oil 3.0 g, hawthorn powder 0.5 g, jujube powder 3.0 g and xylitol 11.0 g. The meal replacer prepared by this deodorization process and formula has a suitable odor and good taste.
