摘要
利用蛋白质燃烧法建立适用于全营养液态乳中蛋白质含量测定的方法。以杜马斯定氮仪作为分析仪器,探索测定蛋白质含量的最佳条件为氧气因子0.8 mL·mg^(-1)、氧气流量200 mL·min^(-1)、取样量100 mg,结果重复性试验RSD为0.9%,回收率为99.3%~101.6%。燃烧法与凯氏定氮法的测定结果对比显示二者无显著差别,表明燃烧法适用于测定全营养液态乳的蛋白质指标。
A method for the determination of protein content in total nutrition liquid milk was established by using protein combustion method.The optimum conditions of protein content were explored by using Dumas nitrogen analyzer as follows:the oxygen factor is 0.8 mL·mg^(-1),the oxygen flow is 200 mL·min^(-1) and the sample weight is100 mg.The results showed that the RSD of repeatability test was 0.9%,and the recovery rate was 99.3%~101.6%.There was no significant difference between combustion method and Kjeldahl method.The results show that the combustion method is suitable for the determination of protein index of total nutrition liquid milk.
