摘要
近年来,全国餐饮业飞速发展,在疫情的趋势下,高校智慧食堂可以实现避免密集人流,对阻断传染途径具有重要意义,本文使用“5W1H”、“ECRS四原则”分析发现食堂布局和取餐流程存在的问题,运用基础工业工程和anylogic人流仿真对食堂取餐流程进行分析和优化,通过app点餐来减少人流密度,提高就餐效率,促进服务与管理的双提升。
In recent years,the catering industry across the country has developed rapidly.Under the trend of the epidemic,smart cafeterias in universities can avoid intensive crowds and block transmission routes.It is of great significance.This paper uses"5W1H"and"ECRS four principles"to analyze the layout and access of cafeterias.Meal process storage problems,basic public works and anylogic pedestrian flow simulations are conducted to research and analyze the dining process in the canteen according to the identified problems.The app ordering reduces the flow of people,improves dining efficiency,and promotes both service and management.
