油脂固体脂肪指数测定在实验教学中的应用

摘要 阐述了油脂固体脂肪指数(SFI)的测定方法,介绍了利用油脂固体脂肪指数曲线判断原料油脂使用范围的实验过程,并通过添加乳化剂的方法改变SFI,从而拓宽油脂使用范围。该实验内容在油脂工业领域应用较广,属于工程类实验,是对食品科学与工程专业现有实验课程的有益补充。将该实验应用于本科实验教学有利于学生掌握基本的工业操作技能,巩固和深化所学理论知识,进一步培养学生分析和解决工程实践问题的能力及创新思维。 Determination method of solid fat index(SFI)of oils and fats was described,experimental process of using solid fat index curve to judge application range of raw oil was introduced,and SFI was changed by adding emulsifier,so as to broaden application range of oil.This experiment is widely used in field of oil industry and belongs to engineering experiment.It is a useful supplement to existing experimental courses of food science and engineering.The application of this experiment in undergraduate experimental teaching is helpful for students to master basic industrial operation skills,consolidate and deepen theoretical knowledge,and further cultivate students’ability to analyze and solve engineering practical problems and innovative thinking.
