摘要 随着人们生活水平的不断提高,微生物加工食品逐步已经走进人们的餐桌,不断丰富着饮食的种类,如酒、乳制品、豆制品、调味品等的制作都离不开微生物的参与。微生物已经与人们的饮食、生活密不可分,加强食品微生物检验,对保证饮食安全具有重要意义。近年来,随着科学技术的不断发展,微生物检测技术也由传统培养转入分子生物学等先进技术方向,出现了高通量并行检测技术、核酸扩增技术、飞行时间质谱分析技术等新的微生物检验技术,因其简便、快捷、高效、灵敏、准确等优势被研究和应用。本文综述了近年来微生物检验技术的发展情况,从食品微生物检验对食品安全的重要意义、应用流程、应用进展等方面,对食品微生物检验进行相关总结,为推动建立高效的食品微生物检验系统提供一定参考。 With the continuous improvement of people’s living standards,microbiological processed food has gradually entered people’s dining table,constantly enriching the types of diet,such as the productions of wine,dairy products,bean products,condiments and so on are inseparable from the participation of microorganisms.Microorganisms have been closely related to people’s diet and life.It is of great significance to strengthen food microbiological testing to ensure food safety.In recent years,with the continuous development of science and technology,microbiological detection technology has also changed from traditional culture to molecular and other advanced technology.New microbiological detection technologies,such as high-throughput parallel detection technology,nucleic acid amplification technology,time-of-flight mass spectrometry analysis technology,have been studied and applied because of their advantages of simplicity,quickness,high efficiency,sensitivity and accuracy.This paper summarizes the development of microbiological detection technology in recent years,and summarizes the significance of food microbiological detection to food safety,application process and application progress,so as to provide some reference for promoting the establishment of an efficient food microbiological detection system.
