摘要
利用超快速气相电子鼻技术,解析不同产地胡椒及胡椒提取物挥发性电子鼻响应特征并构建指纹图库,通过主成分分析建立胡椒及胡椒提取物分类的有效判别模型,为市售胡椒及胡椒提取物品质评价及产地区分提供理论参考依据,同时解析胡椒物质构成特征,进一步明确胡椒及胡椒提取物气味特征描述和香气贡献值,为胡椒提取物香气成分调配及差异化产品开发提供理论支撑。
Using ultra-fast gas chromatography electronic nose technology,volatile electronic noses response characteristics of pepper and pepper extracts from different origins were analyzed and a fingerprint library was established.An effective discrimination model for the classification of pepper and pepper extracts through principal component analysis was established for peppers and peppers extracts from the market.Theoretical references for the evaluation of material quality and products origins are provided.At the same time,the composition of pepper was analyzed,the description of odor and aroma contribution value of pepper and pepper extracts were further elaborated.The study provides theoretical references of pepper extracts aroma blending and development of different flavor products.
