摘要
本文以套袋与未套袋‘瑞雪’苹果为材料,研究了四个采收时间(10月5日、10月11日、10月18日和10月25日)对其物理、化学指标与感官品质的影响。结果表明,随着采收期的推移,套袋与未套袋苹果果实横径、单果质量、可溶性固形物含量、水分含量、pH值、a值及出汁率均呈上升趋势,而硬度显著下降。套袋苹果的单果质量、硬度、pH值、水分含量、出汁率、L值、a值均高于未套袋苹果的。感官综合评价表明,未套袋苹果与套袋苹果在陇东旱塬区分别于10月11日和10月18日前后采摘,其商品价值最高。
Taking bagged and unbagged ‘Ruixue’apple fruits as materials, the effects of four harvesting times(October 5, 11, 18 and 25) on physical and chemical indexes and sensory indexes were studied. The results showed that the fruit diameter, fruit weight, soluble solid content, water content, p H value, a and juice yield of bagged and unbagged apples increased with the passage of harvesting period while the hardness decreased significantly. The single fruit weight, hardness, p H value, moisture content, juice yield, L, a value of the bagged apples were higher than those of the unbagged apples. The sensory comprehensive evaluation showed that the unbagged apples and bagged apples with the highest commodity value of were picked around October 11 and October 18 in the dry area of eastern Gansu province, respectively.
