摘要
中国是世界第一大黑木耳生产国,产量占世界的90%以上。黑木耳中含有多种丰富的营养元素,如蛋白质、膳食纤维、多糖、氨基酸、黑色素、黄酮、多酚以及铁、锌、钙、锰等48种常量和微量元素。此外,还有卵磷脂、麦角甾醇等。黑木耳具有预防动脉粥样硬化、抑制血栓形成、缓解缺铁性贫血等保健功效。但我国黑木耳加工多为粗加工,附加值较低。基于此,通过查阅相关文献综述我国黑木耳产品的研发现状,为后续深加工产品的研发提供正向帮助。
China is the world’s largest producer of black fungus, accounting for more than 90% of the world’s output. Black fungus contains a variety of rich nutrients, including protein, dietary fiber, polysaccharides, amino acids, melanin, flavonoids,polyphenols, iron, zinc and 48 kinds of macro and trace elements, such as calcium and manganese. In addition, there are lecithin, ergosterol and so on. Black fungus has health care effects such as preventing atherosclerosis, inhibiting thrombosis and relieving iron deficiency anemia. However, the processing of black fungus in my country is mostly rough processing with low added value. Based on this, reviewing the research and development status of my country’s black fungus products by consulting relevant literature can provide positive help for the subsequent research and development of deep-processed products.
