摘要
黄连为中医临床常用药,具有多种药理功能,其抑菌作用非常广泛,素有“中药抗生素”之称。随着人们对食品安全性的重视,利用中药材开发天然食品防腐保鲜剂成为当前一大热点。综述了黄连的主要抑菌成分、抑菌作用及其在常见几种食品原料的保鲜与防腐中的应用,以期为黄连在食品防腐保鲜中的进一步应用奠定基础。
Coptis chinese is a common clinical medicine of traditional Chinese medicine,with a variety of pharmacological functions,known as‘Chinese medicine antibiotic’,whose antibacterial effect is more extensive.Due to people’s attention to food safety,the development of natural food preservatives using Chinese medicinal materials is a hot topic at present.This review summarized the antibacterial components,antibacterial action,and the application of Coptis chinese in several common food ingredients,which laid a foundation for further application of Coptis chinese in food preservation.
