摘要
可食性油墨是一种以可食性原料制备的新型绿色环保油墨,能够通过现有的印刷方式直接转移到食品、药品及可食性包装材料的表面。本研究以柠檬草精油为抗菌剂,以天然色素、橄榄油、果葡糖浆、明胶等可食性物质为主要原料制备了蓝、红、黄三种颜色的抗菌型可食性油墨。并以栀子蓝油墨为例,对其流变性、印刷适性、抗菌性等性能进行了评价。结果表明,制备的可食性栀子蓝油墨符合丝网印刷油墨的标准要求,在食品、包装材料等承印物上具有良好的印刷效果,并且对霉菌具有优良的抗菌效果,证明可食性油墨为食品、药品的表面印刷提供了安全的方法,并可起到延长食品保质期的作用。
Edible ink is a kind of new green environmental protection ink prepared with edible raw materials.It can be transferred directly to the surface of food,medicine and edible packaging materials through the existing printing methods.In this study,the antibacterial edible ink with three colors of blue,red and yellow was prepared with lemon grass essential oil as antibacterial agent,and edible substances such as natural pigment,olive oil,fructose syrup and gelatin as the main raw materials.Taking gardenia blue ink as an example,its rheological properties,printability and antibacterial properties were evaluated.The results showed that the prepared edible gardenia blue ink can meet the standard requirements of screen printing ink,and has good printing effect on food,packaging materials and other substrate,and has good antibacterial effect on mould.Edible ink provides a safe method for food and drug surface printing,on the other hand,it can also extend the shelf life of food,and has a broad application prospect.
