摘要
大豆容易受到储存环境的影响发生浸油赤变,导致品质劣变,经济效益降低。文章主要综述了大豆储藏过程中发生浸油赤变的原因、对品质的影响和防治措施,以期为未来防控浸油赤变、保障大豆安全储藏方面的研究提供理论参考。
Soybean is easily affected by the storage environment because of its own characteristics,which leads to the deterioration of quality and the reduction of economic benefits.In this paper,the causes of soybean soaking red stain during storage,the impact on quality and control measures were summarized,in order to provide theoretical reference for the future research on controlling soaking red stain and ensuring the safe storage of soybeans.
