摘要
目的:对鳕鱼及其制品真伪属性情况进行调查分析,从而为食品安全监管部门的后续监管提供指导性意见。方法:依据SN/T 3589.7—2013和BJS 201907对鳕鱼及其制品中鳕鱼、油鱼、裸盖鱼和南极犬牙鱼的源性成分进行鉴定,并与标签明示成分对比,确认掺假情况。结果:共检测35批次样品,其中22批次标签标示为鳕鱼的产品中2批次未检出鳕鱼成分,2批次检出油鱼成分;8批次标签标示为裸盖鱼的产品中7批次检出裸盖鱼成分,1批次检出油鱼成分;5批次标签标示为南极犬牙鱼的产品中4批次检出南极犬牙鱼成分,1批次未检出该成分。结论:加强鳕鱼、裸盖鱼及南极犬牙鱼的风险监测,保证消费者食用到健康安全的产品;对鳕鱼、裸盖鱼及南极犬牙鱼市场命名进一步规范,保护该类产品市场价格体系和消费者的合法权益。
Objective: To investigate the adulteration situation of cod fish and its products, so as to provide guidance for the following supervision of food safety supervision authorities. Methods: According to SN/T 3589.7—2013 and BJS 201907, the source ingredients of cod, oilfish, sablefish and patagonian toothfish were identified, and compared with the stated label. Results: A total of 35 samples were tested. The results showed that 2 cod fish products were unablely detected,2 cod fish products were detected as oil fish, 7 sablefish products were detected, 1 sablefish product was detected as oil fish, 4 patagonian toothfish products were detected, 1 sablefish products were not detected. Conclusion: To strengthen risk monitoring of cod, sablefish and patagonian toothfish to ensure that consumers can eat healthy and safe products;To standardize the market naming of cod, sablefish and patagonian toothfish for protecting the market price system of such products and the legitimate rights and interests of consumers.
