“烹饪原料学”微课程群设计及应用研究

摘要 “烹饪原料学”是烹饪与营养教育专业的必修课程,以“烹饪原料学”为核心构建“烹饪原料学”微课程群,主要从前期分析、微课程群的设计、微课程的制作及微课程群的应用等方面进行研究。将“烹饪原料学”微课程群应用于课堂教学及人才培养中,可提高教学质量,实现资源共享,从而促进烹饪及教育事业的发展。 Cooking Materials science is a compulsory course for the specialty of cooking and nutrition education.This paper takes Cooking Materials science as the core to construct the micro curriculum group of cooking materials science,mainly from the aspects of preliminary analysis,the design of micro curriculum group,the production of micro curriculum and the application of micro curriculum group.Applying the micro curriculum group of cooking raw materials to classroom teaching and talent training can improve teaching quality and realize resource sharing,so as to promote the development of cooking and education.
