摘要
以广西盾翅藤为研究对象,从主要营养成分、矿质营养元素和氨基酸3方面分析其可食叶和可食茎的营养成分构成。结合食品安全国家标准和中国卫生行业标准测定各类营养元素含量,并通过营养推荐摄入量的百分数、氨基酸比值系数和氨基酸比值系数分等指标,评价广西盾翅藤的营养价值和药用价值。结果表明:与3种常见木本蔬菜相比,广西盾翅藤的营养价值更高、含量更丰富,其中,蛋白质4.9 g/100 g、维生素C 0.121 g/100 g~0.421 g/100 g、锌4.78 mg/kg~7.35 mg/kg、钙1080 mg/kg~2150 mg/kg、镁370 mg/kg~570 mg/kg。氨基酸总量为3.11 mg/kg~3.58 mg/kg,必需氨基酸质量分数为37.4%~42.4%,均比3种常见木本蔬菜相应指标高。广西盾翅藤可食叶与可食茎的营养成分组成基本一致,但可食叶中维生素C、钙、铁、镁、硒5种营养素的含量相对较高,氨基酸构成也更接近营养标准模式的理想值。广西盾翅藤营养成分含量高,营养组分均衡,并含有较丰富的呈味和药用氨基酸。
Edible leaf and stem contents of Aspidopterys concava were analyzed to identify and quantitate its main nutritional components,mineral nutrients,and amino acids.The nutritional value and medicinal value of Aspidopterys concava were evaluated relative to the national food safety standard and China's health industry standard,and were reported here in terms of nutritional recommended intake percentage,amino acid ratio coefficient and amino acid ratio coefficient score.Compared with three other woody vegetables,Aspidopterys concava displayed higher nutritional value and richer content,particularly in protein(4.9 g/100 g),vitamin C(0.121 g/100 g-0.421 g/100 g),zinc(4.78 mg/kg-7.35 mg/kg),calcium(1080 mg/kg-2150 mg/kg),and magnesium(370 mg/kg-570 mg/kg).Total amino acid content was 3.11 mg/kg-3.58 mg/kg,and essential amino acid content was 37.4%-42.4%.Both values were higher in Aspidopterys concava than those of three other common woody vegetables.However,the nutritional components of edible leaves and edible stems of Aspidopterys concava were not significantly different from those of the other woody vegetables.The contents of vitamin C,calcium,iron,magnesium and selenium in edible leaves were relatively dominant,and the amino acid composition was close to the nutritional values of the standard model.Aspidopterys concava has high nutritional content,balanced nutrition,rich flavor,and medicinal amino acids.
