摘要
硒是人体内一种必需的微量元素,主要以硒蛋白的形式在人体中参加生理活动,发挥抗氧化与免疫作用。硒对维持人体内细胞正常功能极为重要。硒蛋白水平下降,会导致机体在抗氧化、免疫、毒素拮抗、信号分子通路等方面均受影响。文章系统综述了水提取法、碱提取法、盐提取法、醇提取法、酶提取法和物理提取法等硒蛋白的提取工艺方法,阐释了硒蛋白构成的硒酶的生理作用,并对硒蛋白在食品中应用的现状进行总结。文章将为硒蛋白的提取技术研究提供相应的理论依据,加大推进硒蛋白在富硒食品开发中的应用。
Selenium is an essential trace element in human body,it participates in physiological activities in the form of selenoprotein with antioxidant and immune activity.Therefore,selenium plays a critical role in maintaining the normal function of cells in human body.The decrease of selenoprotein level will lead to effects for antioxidants,immunity,toxin antagonism,signaling pathway of organism.In this review,different extraction approaches,such as water extraction,alkali extraction,salt extraction,alcohol extraction,enzyme extraction and physical extraction,were introduced.Physiological function of selenase composed of selenoproteins is also discussed.We highlight the current application status of selenoprotein in food industry.The aim of this review is to provide a theoretical basis for the extraction of selenoprotein and improve the application prospect of selenoprotein in the development of selenium-rich food.
