摘要 目的旨在通过系统综述壳聚糖性质、壳聚糖薄膜制备方法,以及壳聚糖薄膜在食品包装上应用的国内外研究成果,为开发可降解性、抗菌性、抗氧化性、阻隔性能以及力学性能均较优秀的壳聚糖食品包装膜提供方法指导。方法综述壳聚糖性能特点、壳聚糖食品包装膜的制备工艺和影响壳聚糖食品包装膜性能的各种因素,重点探讨国内外壳聚糖食品包装的研究现状。结果向成膜配方中添加蛋白类、酚类以及其他天然提取物等助剂,可改善壳聚糖复合膜的物理力学性能、阻隔性能、抗氧化性能以及抗菌性能。结论壳聚糖基于自身的可降解性和抗菌性,在食品包装膜领域具有良好的发展和应用前景,但就目前的研究成果以及壳聚糖复合膜实际应用过程中出现的问题来说,壳聚糖食品包装膜在生产工艺、综合性能等方面还有待提高。 The work aims to systematically review the properties of chitosan, the preparation methods of chitosan films, and the research results of the application of chitosan films in food packaging at home and abroad, so as to provide method guidance for the development of chitosan food packaging films with excellent degradability, antibacterial properties, oxidation resistance, barrier properties and mechanical properties. The properties of chitosan, the preparation technology of chitosan food packaging film and the factors that affect the performance of chitosan food packaging film were summarized. The research status of chitosan food packaging in China was mainly discussed. The results showed that adding proteins, phenols and other natural extracts to the film formulation could improve the physical and mechanical properties, barrier properties, oxidation resistance and antibacterial properties of chitosan composite film. Chitosan has a good development and application prospect in the field of food packaging film based on its own degradability and antibacterial properties. However, according to the current research results and the problems in the practical application of chitosan composite film, the production process and comprehensive performance of chitosan food packaging film still need to be improved.
