微波-双酶解法制备淮山抗性淀粉的研究 被引量:2

摘要 抗性淀粉具有类似膳食纤维的作用,具有重要的生理功能和优良的食品加工性能。为了增加淮山产品的利用价值,通过单因素试验和均匀试验,利用微波-双酶解的方法来研究制备淮山抗性淀粉的工艺,得到其最佳制备工艺参数为:淮山淀粉乳浓度为15%,先用144W微波处理120s后,按6U/g干淀粉加入耐高温淀粉酶酶解75min,再按2U/g干淀粉加入普鲁兰酶酶解3h;酶解液经离心、老化、烘干、粉碎、过筛后即得淮山抗性淀粉样品,其中抗性淀粉得率为14.32%。研究结果可为淮山抗性淀粉的生产提供科学依据。 Resistant Starch is similar to dietary fiber,and has important physiological functions and excellent food processing properties.In order to increase the use value of the Chinese yam products,by single factor experiments and uniform test,the method of using microwave-two enzyme solution to study the preparation of resistant starch technology of Chinese yam.The optimum preparation parameters were obtained as follows:Chinese yam starch milk concentration was 15%,with 144W microwave effect after 120s,first as 6U/g dry starch to join high temperature amy⁃lase enzyme 75min,then 2U/g dry starch to join pullulan enzyme digestion 3h;After centrifugation,aging,drying,crushing and sieving,Chinese yam resistant starch sample was obtained,in which the yield of resistant starch was 14.32%.This study is the application of microwave-two enzymatic hydrolysis method to prepare resistant starch in Chinese yam,which can provide some scientific basis for the production of resistant starch in Chinese yam.
