摘要
以藜麦和红米两种谷物为原料,对其中的可溶性多酚和键合多酚进行提取,利用Folin-Ciocalteau法测定藜麦和红米中可溶性多酚和键合多酚的含量,并对多酚含量和抗氧化活性进行比较。结果表明,红米的可溶性多酚含量高于藜麦,而键合多酚含量低于藜麦,其中红米的可溶性多酚含量最高。红米中可溶性多酚和键合多酚的DPPH自由基清除能力、FRAP还原能力和TEAC总抗氧化能力均高于藜麦,红米中可溶性多酚的总抗氧化能力最强。为藜麦和红米的开发和利用提供了一定的科学依据,为产品深加工提供新的思路。
Using quinoa and red rice as raw materials,the soluble polyphenols and bonding polyphenols were extracted in their contents. The content of soluble and bonding polyphenols in quinoa and red rice was determined by Folin-Ciocalteau method.and the polyphenol content and antioxidant activity were compared. The results showed that,the soluble polyphenols content of red rice was higher than that of quinoa,while the bonded polyphenols content was lower than that of quinoa,and the soluble polyphenols content of red rice was the highest. Soluble polyphenols in red rice,the DPPH free radical scavenging capacity of bonded polyphenols,iron ion reduction/antioxidant capacity and total antioxidant capacity were stronger than quinoa,the total antioxidant capacity of soluble polyphenols in red rice was the strongest. Pass this test provided certain scientific basis for the development and utilization of quinoa and red rice,provided new ideas for the further processing of products.
