变黄期不同湿球温度对烤烟质量形成的影响 被引量:4

Effects of Different Wet Bulb Temperature on Quality of Flue-cured Tobacco at Yellowing Stage

摘要 为了研究湿球温度对烤烟品质的影响,明确较适宜的烤烟主变黄湿球温度。利用4种不同主变黄湿球温度参数对烤烟进行烘烤:分别设定低、中、高3个恒定湿球温度和1个阶段湿球温度优化处理,探究了烤烟烘烤过程中水分、叶温、形态的变化,并比较分析了湿球温度对烤后烟的化学成分和感官质量的影响。结果显示:相对于设定恒定湿球温度组,阶段性变化湿球处理有利于提高烤烟干燥过程中的干燥速率,叶温升温较快,缩短烘烤时长,并且阶段性变化湿球处理烟叶在变黄后期到定色期厚度收缩率增幅较大;湿球温度对烤后烟的颜色指标、化学成分和感官质量均有显著性影响(P<0.05),阶段性变化湿球处理的颜色特征最接近国际色卡橘黄色的色度标准,化学成分含量符合优质烟叶标准,综合感官质量最优。 In order to study the effect of wet bulb temperature on the quality of flue-cured tobacco,the suitable wet bulb temperature for main yellowing of flue-cured tobacco was determined.Four different wet bulb temperature parameters for main yellowing were used to cure flue-cured tobacco in this study.Three constant wet bulb temperature and one stage wet bulb temperature were optimized.The changes of moisture,leaf temperature and morphology of flue-cured tobacco during curing were studied,and the chemical composition and sensory quality of flue-cured tobacco were compared and analyzed.The results showed that:Compared with setting the constant wet bulb temperature group,the stage wet bulb optimization treatment can improve the drying rate of flue-cured tobacco.The leaf temperature increased rapidly.The curing time was shortened,and the thickness shrinkage rate of the stage wet bulb optimization treatment increased greatly from late yellowing stage to fixed color stage.The wet bulb temperature had significant effect on the color index,chemical composition and sensory quality of flue-cured tobacco(P<0.05).The color characteristics of the optimized treatment of wet bulb were the closest to the international color standard of orange color.The content of chemical components met the standard of high quality tobacco leaves,and the comprehensive sensory quality was the best.
