摘要
茶渣是茶叶浸提加工后产生的废料,茶渣中含有18%~25%的蛋白质,研究发现茶蛋白具有抗氧化、降血脂及预防辐射等多种生物活性和良好的吸油性、乳化性及稳定性等功能特质。文章针对茶蛋白主要的提取方法与生物活性进行了归纳总结,并对存在的问题进行了讨论,以期为茶蛋白的研究和茶资源的高值化利用提供参考。
Tea residue are waste produced after tea is soaked and processed.Tea residue contains 18%〜25%protein.Tea protein has a variety of biological activities in previous studies,such as antioxidant,lipid-lowering and radiation prevention,and good oil absorption,emulsification and stability and other functions.In this paper,the extraction methods and biological activities of tea protein were reviewed,and the existing problems were discussed to provide reference for the research of tea protein.
