摘要
唐宋时期是江浙地区蟹文化认知和捕蟹技术发展高峰期。人们在了解蟹的形态特征和生长特性的基础上,通过观察蟹群活动规律,掌握了蟹的洄游性、趋光性和畏雾性,丰富了蟹文化认知,从而捕蟹技术不断进步,蟹舍、蟹簖、蟹罾、拖网等捕蟹工具及“火照法”“垂钓法”等捕蟹技法广泛应用;食蟹之风盛行,出现了腌、糟、醉等多种食用方法,以及蟹诗、蟹画等文化作品,丰富了唐宋江浙地区物质和文化生活。
The Tang and Song Dynasties were the peak period for the development of crab culture cognition and crab catching technology in Jiangsu and Zhejiang.On the basis of understanding the morphological characteristics and growth characteristics of crabs,people have mastered the migratory,phototaxis and fog-afraid properties of crabs by observing the laws of crab group activities,which enriched the cognition of crab culture,thus improved the crab catching techniques.Crab catching tools,such as crab hut,bamboo trap,stationary lift net and trawling,and techniques,such as"fire lighting method"and"angling method"were widely used.Crab eating became prevalent with various conditioning methods such as pickling in brine,vinasse and liquor.The appearance of crab paintings and other cultural works enriched the material and cultural lives of Jiangsu and Zhejiang regions in Tang and Song Dynasties.
