摘要
电子鼻(E-nose)是一种无损、快速、实时、环保的检测技术,随着传感器、纳米技术以及化学计量学的发展,该技术已被广泛用于食品、环境、有毒有害气体、医疗等领域。这种高通量、低成本的检测技术和设备已开始逐步代替复杂冗长的传统方法。该文介绍了电子鼻技术的历史发展概况及其在食品安全检测中的应用进展,目前该技术已被用于检测、分类以及预判乳制品、油脂、饮料、水果和蔬菜、肉制品的掺假,同时结合化学计量学,还可对多种理化和感官参数进行定量。随着科学技术的发展,电子鼻在食品安全领域的应用将更加广泛。
With the development of sensors, nanotechnology and chemometrics, electronic nose(E-nose) technology had been widely used in food, environment, medical, toxic and harmful gas detection and other fields with its advantages of high efficiency, fast, non-destructive, real-time and environmental protection. In the world, high-throughput and low-cost detection technology and equipments had gradually replaced the complex and tedious traditional methods. This paper introduced the development of electronic nose technology and its application in food safety detection. At present, the technology had been used to detect, classify and predict the adulteration of dairy products, oils, beverages, fruits, vegetables and meat products. At the same time, combined with chemometrics, a variety of physicochemical and sensory parameters could be quantified. With the development of science and technology, electronic nose would be more widely used in the field of food safety.
