摘要 微生物检验是食品安全抽样检验的常用技术,对保障食品安全至关重要,因此相关人员在食品安全抽样检验中必须做好质量控制工作。文章综述了食品安全微生物检验的内容与特点,并从实验室、样本及人员3个角度论述了影响微生物检验质量的因素,同时就加强食品安全抽样微生物检验中的质量控制提出了针对性的策略,包括加强实验室管理、做好样品的采集与保存、加强人员管理等,以期能为食品微生物检验工作的顺利开展提供参考。 Microbiological inspection is a common technology of food safety sampling inspection, which is very important to ensure food safety. Therefore, relevant personnel must do a good job in quality control in food safety sampling inspection. The contents and characteristics of microbial food safety inspection were introduced in this paper,The factors affecting the quality of microbiological examination were discussed from three aspects, that is laboratory,sample and personnel. At the same time, the targeted strategies strengthen the quality control in food safety sampling microorganism inspection were put forward, such as strengthening laboratory management, completes the sample collection and preservation, strengthen the personnel management, in order to provide reference for the smooth development of food microbiological inspection.
