摘要
香气物质是反映富士苹果品质的一项重要指标,影响富士苹果鲜食及其深加工品品质。综述了国内外对富士苹果果实中香气物质的成分、含量及其影响因素的研究进展,并展望了今后富士苹果香气物质的研究方向,以期为香气物质的深层次研究利用以及富士品种的更新换代提供参考依据。
The aroma compound is an important index of the quality of‘Fuji’apple,affecting the quality of‘Fuji’apple fresh and deep processed products.This paper reviews the research progress on aroma compound composition,their content and influence factors of‘Fuji’apple fruit,and prospects the future research direction of‘Fuji’apple aroma compound,in order to provide reference for in-depth research and utilization of aroma compounds,and the upgrading of‘Fuji’varieties.
