摘要
目的:调查A校食源性疾病的暴发原因,得出事故调查结论,提出预防和控制事故的建议。方法:在A学校、就诊医院进行流行病学调查、食品卫生学调查、采样与实验室检测。结果:根据流行病学调查、食品卫生学及实验室检测结果,可疑餐次为10月16日中餐,可疑食品为米饭和香油肫片,污染环节可能为部分食堂从业人员是带菌者,在加工、洗切、分餐食品时污染了食品、餐具及工具用具,同时加工好的食品长时间在常温下存放,导致细菌在食品中大量繁殖,学生及教师食用了被污染的食品后出现中毒症状。结论:本起事件是由肠集聚性大肠杆菌引起的一起食源性疾病暴发事件。
Objective:To investigate the cause of the outbreak of food-borne diseases in school A,to draw the conclusion of the accident investigation,and to put forward suggestions for accident prevention and control.Method:Epidemiological survey,food hygiene survey,sampling and laboratory testing in school A and hospital.Result:According to the epidemiological investigation,food hygiene and laboratory test results,the suspicious meal was Chinese food on October 16,and the suspicious food was rice and sesame oil gizzard slices.The contamination link may be that some canteen employees were carriers of bacteria,and they were processing the food.When the food is washed,cut,and divided,the food,tableware and tools are contaminated.At the same time,the processed food is stored at room temperature for a long time,which leads to the proliferation of bacteria in the food.Students and teachers have symptoms of poisoning after eating the contaminated food.Conclusion:This event was an outbreak of foodborne disease caused by enteroaggregative Escherichia coli.
