摘要
本文主要介绍了几种常见天然抗氧化剂的抗氧化机理以及不同抗氧化剂在乳制品的应用,旨在为乳制品储存中天然抗氧化剂的开发应用提供参考。
This paper introduces the antioxidant mechanism of several common natural antioxidants and the application of different antioxidants in dairy products,in order to provide reference for the development and application of natural antioxidants in dairy products storage.
