冰温贮藏对玉露香梨果实挥发性有机物的影响 被引量:8

摘要 采用气相离子迁移谱技术对玉露香梨冰温贮藏过程中挥发性有机物的变化进行分析,为玉露香梨果实采后风味调控研究提供数据支撑。结果表明:玉露香梨采后共检测到酯类、醛类、酮类、醇类、酸类、呋喃类共26种挥发性组分,其中正己酸乙酯、乙酸乙酯、反式-2-己烯醛、己醛等物质相对含量较高。贮藏7个月后,冰温、0℃贮藏均抑制了酯类物质的合成,醛类、酮类物质相对含量有所增加。但同一类物质不同成分变化有差异,冰温贮藏条件下己酸乙酯、丙酸己酯、己醛、戊醛和反式-2-己烯醛和6-甲基-5-庚烯-2-酮等物质较0℃贮藏含量高。0℃贮藏条件下乙酸丁酯、乙酸乙酯、2-甲基丙醛、2-甲基丁醛和2-丁酮等物质较冰温贮藏含量高。与0℃贮藏相比,冰温贮藏抑制了玉露香梨果实采后代谢及酯类物质的释放,延缓了果实的衰老。 Changes in volatile organic compounds in Yuluxiang pears during ice-temperature storage were analyzed by gas chromatography-ion mobility spectrometry(GC-IMS),providing data support for the study of post-harvest flavor control in these pears.The results showed that there were 26 kinds of volatile components in 6 categories:esters,aldehydes,ketones,alcohols,acids,and furans.The relative contents of ethyl hexanoate,ethyl acetate,(E)-2-hexenal,and hexanal were high.After ice-temperature and storage at 0℃for seven months,the synthesis of esters was inhibited,and the relative contents of aldehydes and ketones were increased.Results indicated different changes in different components of the same kind of substances.The content of ethyl hexanoate,hexyl propanoate,hexanal,pentanal,(E)-2-hexenal,and 6-methyl-5-hepten-2-one in ice storage was higher than that at 0℃.Contents of butyl acetate,ethyl acetate,2-methylpropanal,2-methylbutanal,and 2-butanone stored at 0℃were higher than those stored at ice temperature.Compared with storage at 0℃,ice-temperature storage inhibited postharvest metabolism and ester release of Yuluxiang pear fruit,delaying fruit senescence.
