黑水虻蛋白粉和油脂对犬粮适口性的影响及主要香味物质的分析 被引量:2

Effect of black soldier fly protein powder and oil on palatability of dog food and analysis of main aroma substances

摘要 试验旨在通过双碗试验比较不同犬粮的适口性。试验设计3种犬粮,犬粮1为鸡肉粉+鱼油鸡油;犬粮2为黑水虻蛋白粉+鱼油鸡油;犬粮3为鸡肉粉+黑水虻油脂。采用同时蒸馏萃取方法,结合气相色谱-质谱联用仪(SDE-GC-MS)对犬粮的可挥发性香味物质进行萃取且分析。结果显示:犬粮2、犬粮3的适口性优于狗粮1。通过GC-MS分离出212种化合物,犬粮的香气成分分别为73、95、103种。犬粮1的主要香味物质为棕榈酸、反油酸、10-顺-十七碳烯酸、十七烷、2,6,10,14-四甲基十九烷、月桂酸、肉豆蔻酸、硬脂烷醛、硬脂酸和丁基苯甲醇;犬粮2的主要香味物质为棕榈酸、月桂酸、亚油酸、十八烯酸、正十七烷二酸、十七碳烯酸、肉豆蔻酸和2,6,10,14-四甲基十五烷二酸;犬粮3的主要香味物质为棕榈酸、肉豆蔻酸、棕榈油酸、反油酸、正癸酸、硬脂酸和十八醛。研究表明,与传统鸡肉粉、鱼油鸡油相比,以黑水虻蛋白粉和黑水虻油脂分别为主要动物蛋白和油脂来源制成的犬粮,具有更好的适口性和独特的风味。 The study was to compare palatability of different dog foods by a two-bowl test.Three kinds of dog food were designed,dog food 1 was chicken meal+fish oil chicken oil,dog food 2 was black horsefly protein powder+fish oil and chicken oil,and dog food 3 was chicken powder+black horsefly grease.The volatile aroma compounds of dog food were extracted and analyzed by gas chromatography-mass spectrometry(SDE-GC-MS).The results showed that the palatability of dog food 2 and 3 was better than that of dog food 1.By GC-MS,212 compounds were isolated,and 73,95and 103 compounds were found in dog food,respectively.The aromatic substances of dog food 1 were palmitic acid,trans-oleic acid,10-cis-heptadecenoic acid,heptadecane,2,6,10,14-tetramethylninethane,lauric acid,myristic acid,stearic acid,stearic acid and butylbenzyl alcohol,the aromatic substances of dog food 2 were palmitic acid,lauric acid,linoleic acid,octadecenoic acid,n-heptadecanoic acid,heptadecenoic acid,myritic acid and 2,6,10,14-tetramethylpentadecanoic acid,and the aromatic substances of dog food 3 were palmitic acid,myristic acid,palmitic acid,trans-oleic acid,n-decanoic acid,stearic acid and octadecaldehyde.The study indicates that compared with traditional chicken meal and fish oil,the dog food made from black horsefly protein powder and black horsefly oil as main animal protein and oil sources has better palatability and unique flavor composition.
