摘要
植物非特异性脂质转运蛋白(nsLTPs)是食物中主要的过敏原,其三维结构高度保守,在胃肠道消化酶或食物加工处理过程中表现了超强的稳定性;其致敏病例呈特殊的地理分布,不同来源的nsLTPs过敏原具有广泛的IgE交叉反应性。该文就植物nsLTPs的蛋白结构、生物学功能及其作为典型食物过敏原的特性等展开综述,旨在为减轻该蛋白引起的食物和花粉过敏反应研究提供理论基础。
Plant non-specific lipid transfer porteins(nsLTPs)are the main allergens in food.Their threedimensional structure is highly conserved and shows strong stability in gastrointestinal digestive enzymes or food processing.The sensitization cases showed a special geographical distribution,and nsLTPs allergens from different sources had a wide range of IgE cross-reactivity.This paper reviews the structure,biological functions and characteristics of plant nsLTPs as typical food allergens,in order to provide a theoretical basis for reducing food and pollen allergic reactions caused by these proteins.
