摘要 牦牛乳富含蛋白质、脂肪、糖类等多种营养素,营养价值极高,是藏族牧民生存的重要营养来源。但目前市场上牦牛乳制品种类较少,加工水平较低,亟待进一步研究。本文对牦牛乳组分及其抗氧化、抗肿瘤、提升耐力、缓解疲劳、耐缺氧等多种功能特性进行综述,并与其他哺乳动物乳(奶牛、水牛、山羊、绵羊、人乳)的营养成分比较分析,以期进一步加深对牦牛乳及其产品的营养成分和功能特性的研究,为牦牛乳制品的开发和利用提供理论支持。 Yak milk is rich in various nutrients such as protein,fat,carbohydrate,etc. It has extremely high nutritional value and is an important source of nutrition for the survival of Tibetan herdsmen. However,there are few types of yak dairy products on the market and the processing level is low,and further research is urgently needed. This article reviews the nutritional components of yak milk and its various functional properties such as anti-oxidation,anti-tumor,improving endurance,alleviating fatigue and resistance to hypoxia,based on comparing the nutritional content of yak milk with other mammalian milk(cow,buffalo,goat,sheep and human milk). In order to further deepen the relevant research on the nutritional components and functional characteristics of yak milk and its products,this review provides theoretical support for the development and utilization of yak milk products.
