摘要
研究鹿皮胶汁对线虫的体内抗氧化性,探讨了鹿皮胶汁的体内抗氧化作用。在单因素试验的基础上通过响应面试验优化红枣山楂鹿皮胶果冻产品配方。结果表明:与空白组相比,鹿皮胶汁在1.0 mg/mL时,线虫体内超氧化物歧化酶(SOD)、过氧化氢酶(CAT)活性分别提高了23%、91%,丙二醛(MDA)含量减少了74%,说明鹿皮胶汁对线虫具有良好的抗氧化性。以果冻质量为基准,红枣山楂汁添加量20%、鹿皮胶汁添加量30%、蜂蜜添加量15%、复合凝胶剂添加量1.2%(魔芋胶、卡拉胶、琼脂的质量比为3∶1∶2),果冻产品口感较好,无致病菌检出。
The antioxidative effect of deerskin gum juice on nematodes in vivo was studied.On the basis of single factor experiment,the formula of jujube hawthorn deerskin jelly was optimized by response surface methodology.The results showed that compared with the blank group,the activities of superoxide dismutase(SOD)and catalase(CAT)in nematodes were increased by 23%and 91%respectively,and the content of malondialdehyde(MDA)was reduced by 74%when deerskin gum juice was 1.0 mg/mL,indicating that deerskin gum juice had good antioxidant activity against nematodes.Based on the mass of jelly,the addition of jujube and hawthorn juice 20%,deerskin gum juice 30%,honey 15%,and the addition of compound gel agent 1.2%(the mass ratio of konjac gum,carrageenan and agar was 3∶1∶2).The taste of jelly products was good,and no pathogenic bacteria were detected.
