摘要
赤藓糖醇是一种天然活性物质,在食品行业、医药行业、化工行业等行业广泛应用。随着营养学的发展,学者对赤藓糖醇的特性及理化性质的研究不断深入,赤藓糖醇的应用逐渐扩大。本文从结构和理化性质、生理功能、生产方式等几个方面阐述了赤藓糖醇,并结合最新研究进展重点阐述其在食品行业的应用,以期为赤藓糖醇的应用研究和资源化利用提供一定的理论依据和参考。
Erythritol is a natural active substance,which is widely used in food industry,medicine industry,chemical industry and other industries.With the development of nutrition,scholars’research on the characteristics and physical and chemical properties of erythritol continues to deepen,and the application of erythritol gradually expands.In this paper,the structure,physical and chemical properties,physiological functions,production methods and other aspects of erythritol were expounded,and its application in food industry was emphasized in combination with the latest research progress,in order to provide some theoretical basis and reference for the application research and resource utilization of erythritol.
