摘要 目的:通过对蚕蛹氨基酸的制备提取工艺、营养价值、功能及应用进展进行综述,为蚕蛹氨基酸资源的进一步开发利用提供参考。方法:总结文献、书籍中有关蚕蛹氨基酸制备工艺、营养功能及应用研究的相关信息。结果:我国蚕蛹资源丰富,蚕蛹氨基酸种类齐全,数量充足,比例适当,具有增强免疫力等功效;酸水解法和酶水解法制备蚕蛹氨基酸优缺点各异。结论:蚕蛹氨基酸原料来源丰富,易于制备,营养价值高,市场前景良好。 [Objective] To review the preparation and extraction process,nutritional value,function and application progress of amino acids in silkworm chrysalis to provide reference for the further development and utilization of amino acid resources in silkworm chrysalis.[Method]The information from literatures and books on the preparation technology,nutritional function and application of amino acids in silkworm chrysalis were summarized.[Result]China is rich in silkworm chrysalis resources.Silkworm chrysalis has a complete variety of amino acids with sufficient quantity and appropriate proportion.The amino acids of silkworm pupa have shown the functions of enhancing immunity.Both the acid hydrolysis and enzymatic hydrolysis have been used to extract amino acids from silkworm chrysalis.[Conclusion]There are rich silkworm chrysalis resources in China.The amino acids of silkworm pupa are easy to prepare with high nutritional value,and therefore have a good market prospect.
