修文猕猴桃、新西兰金果猕猴桃与翠香猕猴桃的风味及营养品质检测与比较 被引量:4

摘要 本研究选择来自修文县六桶镇和谷堡镇的修文猕猴桃为研究对象,并以市场上最常见的新西兰进口猕猴桃品种阳光金果和国内种植猕猴桃品种翠香猕猴桃作为对照,对其感官、风味、营养品质进行分析与评价。结果表明,不同猕猴桃品种的感官、风味及营养成分含量水平存在差别。在感官方面,本次测试的猕猴桃均为长圆柱形、多汁、清香,其中新西兰金果猕猴桃的果面绒毛、果皮颜色、滋味等与其他猕猴桃有较大区别;在风味品质方面,两个产地的修文猕猴桃和翠香猕猴桃具有较为合适的糖酸比,且修文猕猴桃的干物质和可溶性固形物含量均较高,在测试的猕猴桃中共检出了82种有效香气成分,不同品种的猕猴桃在挥发性物质的种类和含量上存在差异,修文猕猴桃呈现清香、水果和甜味的酯类和醇类化合物的数量和浓度较高,呈现果香、花香的酮类化合物仅在谷堡镇修文猕猴桃中鉴定出来;在营养成分方面,本次测试的猕猴桃均含有丰富的氨基酸、矿物质成分和维生素,其中,六桶镇和谷堡镇修文猕猴桃的β-胡萝卜素、维生素E、黄酮及膳食纤维均高于新西兰猕猴桃和翠香猕猴桃,维生素C含量介于新西兰猕猴桃、翠香猕猴桃的含量之间,表现出了显著优势。对修文猕猴桃籽的氨基酸进行测试,数据显示修文猕猴桃籽含有丰富的氨基酸。整体而言,修文猕猴桃具有优异的感官、风味和营养品质,适合进一步商业化种植和推广。 This study selected Xiuwen kiwifruit from Liutong town and Gubao town in Xiuwen county as the research object,and took the most common New Zealand imported kiwifruit breed Zespri and domestically grown kiwifruit breed Cuixiang as the contrasts,flavors and nutritional qualities were analyzed and evaluated.The results showed that there were differences in the sensory,flavor and nutritional content levels for different kiwifruit breeds.In terms of sensory aspect,the kiwifruits tested are all long cylindrical,juicy and fragrant.Among them,New Zealand Zespri kiwifruit is quite different from others in itsfluffy surface,skin color and the taste.In terms of flavor quality,Xiuwen kiwifruit and Cuixiang kiwifruit from the two origins have a relatively suitable sugar-to-acid ratio,and the dry matter and soluble solid contents of Xiuwen kiwifruit are high.A total of 82 kinds of effective aromas are detected in the tested kiwifruit.Different varieties of kiwifruits have differences in the type and content of volatile substances.Xiuwen kiwifruit has a higher quantity and concentration of esters and alcohols that present a light,fruity and sweet taste,and ketones that present fruity and floral aromas.It is identified only in Xiuwen kiwifruit from Gubao town.In terms of nutrients,the kiwifruits tested this time are rich in amino acids,minerals and vitamins.
