基于方差和极差分析的海参微波干燥参数优化

摘要 海参具有极高的营养价值,但由于存在自溶酶,捕捉后的海参会发生溶解,根本无法长期储存与运输。为此采取干燥保存,相比热风干燥,微波干燥对于海参的储存具有一定优势,能很好地保存海参的营养与风味,且产品复水率较高。基于正交试验设计思想,开展海参微波干燥最佳因素水平研究。进行因素主次要分析、因素显著性分析和事后的水平显著性检验。根据不同因素的响应均值及影响因素主次要地位,估计可能的最佳的因素水平组合,并且在假定无交互作用下根据构建的数学模型,估计干燥能耗和干燥时间,据优化指标进一步筛选出最优的水平组合,达到进一步节能减排、优化生产的目的。 Trepang with the high nutrition but it is easy to dissolute due to resolvase,therefore it is impossible to preserve for long time when capturing them from the deep sea and it is unlikely to transport in long distance.For that,the diligence people come idea to their mind which is to dry them.Compared with hot-wind dry,the microwave dry has many strengths,which also retains the nutrition and savor of the trepang with high the water-recovering rate.Based on orthogonal designation,perform the research about dry factors in different level in order to find the primary factor and secondary factors,and then take the significance difference analysis of factors and the level significance difference analysis.According to the means of response in different levels in different factors,it is able to choose the optimum group of levels in different factors.The previous analysis result can evaluate the combination of factors and levels.If there is absolutely no interaction between different factors,then based on the math model built before,the effort of combination of different levels and factors can be estimated,and the optimum combination can be got.
