“金萱”品种加工大田美人茶技术实践 被引量:3

摘要 大田美人茶学名白毫乌龙茶,是借鉴东方美人茶工艺制成的具有果(花)香蜜韵品质特征的乌龙茶产品。根据生产实践,采用金萱品种制作大田美人茶时,以茶小绿叶蝉吸食率达60%~70%的一芽二叶新梢所制成品品质最佳。加工时萎凋需偏重,鲜叶减重30%~35%为宜;手工翻青与机械摇青相结合,置于凉青架堆青,发酵更均匀,发酵程度更高,可达90%;杀青期间不抽风排湿以保持茶叶水分,回润20~25 min后用包揉机和台式揉捻机做形,并以85℃初烘焙。采用该工艺制作的大田美人茶有别于传统工艺的东方美人茶品质,外形卷曲犹如花朵,汤色更透亮,滋味清甜、爽口,叶底橙红、软亮。 The scientific name of Datian Beauty tea is Baihao Oolong tea,which is made from the Oriental Beauty tea process and has the quality characteristics of"fruit(flower)fragrance,honey charm".According to the production practice,the new shoots with one bud and two leaves produced from‘Jinxuan’were the best when the uptake rate of small green leafhoppers reached 60%~70%.During processing,the withering should be heavy and the fresh leaf weight should be reduced by 30%~35%.The combination of manual turning green and mechanical shaking green and Putting on the cool green rack pile green,would result in more uniform and high degree of fermentation(up to 90%).During the fixing period,the tea leaves were not ventilated and dehumidified to maintain the moisture.After re moistening for 20~25 min,they were shaped with a package kneading machineand a desktop kneading machine.It is easier to keep the buds and leaves together when they were initial baked at 85℃.The Datian beauty tea made by this process is different from the traditional Oriental beauty tea.The shape is curly like flowers,the color of the soup is more transparent,the taste is sweet and refreshing,and the leaf bottom is orange and red and soft.
